Happy Halloween!

Happy Halloween Everyone!

This is my best friend Lawana and we LOVE to dress up every year when we go do our visiting teaching.  We visit several sweet ladies in the church ward just to say hello and see if we can do anything for them.  I think each year they can't wait to see our silly costumes!

Pumpkin Apple Spice Muffins

I'm making these little yummies for a church activity on Thursday!  I will let you know what I think of them............I love this website and use these recipes all the time, so please check it out:
http://www.melskitchencafe.com/recipe-index

*Yield: 2 dozen

INGREDIENTS:

1 2/3 cups all purpose flour
1 cup sugar
1 tablespoon pumpkin pie spice**
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1 cup canned pumpkin
1/2 cup butter or margarine, melted
2 large eggs, lightly beaten
1 Granny Smith apple, peeled and finely chopped
1 teaspoon pumpkin pie spice**
3 tablespoons sugar

DIRECTIONS:
Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine pumpkin, butter, and eggs in another bowl and add to dry ingredients, stirring just until moistened. Fold in chopped apple and spoon into greased muffin pans, filling two-thirds full. Combine 3 tablespoons sugar and 1 teaspoon pumpkin pie spice; sprinkle evenly over muffins. Bake at 350 degrees for 20 minutes. Remove from pans immediately, and cool on wire racks.

**My tip: if you don’t have pumpkin pie spice, use the following combination: 1/2 teaspoon cinnamon, 1/4 teaspoon ginger and 1/8 teaspoon nutmeg and 1/8 teaspoon cloves. Mix together and woila! – you have the equivalent of 1 teaspoon pumpkin pie spice (and it is much cheaper than buying it premade).

Ha Ha Ha

Weirdness.........

I value the present and the future and I try to live in it!  One of my most favorite quotes and one that I try to live by daily and quoted by President Gordon B. Hinckley of the LDS Church is this:

To Truly Be Happy You Have To Live In The Now!

The Past is done and I can't change it!  I can only live in the present and plan for the future!

Hopefully........I have learned from the past and made amends for any wrong doings!

But........how totally awkward is it when you bump into someone that you haven't seen in a very long time and you just don't know quite what to say or do.  Do you hope that they haven't seen you and quickly head on over to the electronics isle?  Is it possible that they have been watching you all along while you are shopping the frozen food section?  So many questions here!  But, does it even really matter?  Have they even seen you?  Would they even recognize you?

I guess the awkwardness here is what lies within your head and how long you are going to ponder all of the ridiculous thoughts and questions this "near" chance encounter brings with it.  How long are you going to let yourself go back to that place in time and wish you would have done things differently............

It's best to try and move on... with living.... within the now.

Waiting........

Nutcracker Ballet 2012

We got our tickets in the mail today!

I am so super duper excited this year!

This is the first year that our little Henli who is 4 will be attending her very first performance of the Nutcracker Ballet!  It has been such a wonderful tradition for our family and..... enjoying the Nutcracker ballet sets the tone for the entire Christmas Holiday Season!

How blessed I am to have such wonderful children and grandchildren!

Four tickets to the ballet, lunch at the Olive Garden and the four of us at Temple Square in downtown Salt Lake City.......!

"Priceless"

"Zombie" (African Style) Thriller Dance Song - ft. Alex Boye

And............he's a Mormon!
I don't know why some people think we are so strange.

On Friday, a guest at my work made a strange and not very nice comment about mormons.
I was somewhat shocked..... but not surprised.
I immediately said this statement:
You really should get to know us....we are really nice people!

Homesickness

My best friend Kathy posted this pic of Geode State Park in southeastern Iowa recently.

I miss living where there are four seasons and I get instantly homesick when I see this.

Someday.................

Vintage Halloween

I love Vintage Halloween photos!

It takes me back to a simpler time when we didn't order costumes but we made them ourselves!

I grew up in a small rural town in south eastern Iowa and I can still "feel" the many Halloween's I enjoyed there as a child.  We didn't need to worry about being kidnapped or poisoned and we spent hours trick or treating and filling our pillowcase to the brim with goodies!  It was the best!

We stayed out until very late into the night and then my brother and I would trade different candies for hours, days.....and that was only if we could remember where we had hid our "loot" from each other!

Ahhhhh....the good ole daze!
I miss them..... and I am thankful for my precious memories!

And back then.......a fun size candy bar was actually regular size plus!

Stopping long enough to say "Hello" to his sweet family then onto the last couple of miles!

Hmmmm... My favorite store and this one at the Caesar's Forum Shops was amazing!
The story is ....it takes in $80,000.00 a day!

What would life be without a very expensive night of "gelato"!
Two scoops please!
